I'd have to go with the Heroes of Might and Magic soundtracks on this. They are bracing without being obtrusive, and make for wonderful and varied background music for all things fantasy-related. Kirill Pokrovsky's Divinity soundtracks aren't far behind, though. Music from King of Dragon Pass and The Elders Scrolls series also deserve a mention. It's a pity there wasn't more of Stakula's music in Legend of Grimrock - the main theme is fantastic!
When I want something with a bit more kick to it, Matt Uelmen is my go-to guy.
For a science fictiony mood I've found the Mass Effect soundtracks a good companion, as well as Ben Prunty's music for FTL: Faster Than Light.
Then there's a plethora of soundtracks from point-and-click adventure games for various situations, with a special mention to Nathan Allen Pinard's work for Gemini Rue.

Too much to name, I'm an avid soundtracks collector, and games are no exception. Like classical music soundtracks tells a story, with the added benefit of modern composition and/or specific setting that may be not easy to find in classical ( although Debussy and laters did pump back passion into an art that was becoming too technical and less emotional ). I do love the fact that www.gog.com, when you buy a game, give the OST for free as a goodie when possible.

Most of the game scores I love I found via this place called "Radio Rivendell". Anyways, Witcher has firmly claimed top spot. I still love Knights of Honor.

Knights of Honor is really good, as is Trine. Both of which as Khazar-Khum said, I first heard on RR.
Personally, I love the music from Halo, the sheer majesty of it is breathtaking. Fits right in with the game.

Music in video games !!!?? I love Crusader Kings 2 songs !! I'm a fanatic about the Medieval Era (the real one, without magic!). If you don't know the game, you should really try it !!
Gotta love certain game soundtracks for sure! I loved some of the Metal Gear Solid songs! Also I think the remake of X-Com Enemy Unknown had a badass soundtrack on PS3/Xbox! I agree with the Medievil Era being awesome too man!

Great video game and soundtrack music inspire me more than practically any standalone/radio music, as I can attach a personal experience to every song. And they are created to move you in very specific ways according to the events in the game. Here are some great examples of video game music (in no particular order) that has gotten my imagination flying (admittedly, I haven't been able to play video games as much I used to, so many of these are on the older side):

Fallout series (particularly Mark Morgan's ambient work in 1 and 2)

Thief series (haven't played the reboot; Eric Brosius also has masterful ambient music)

Call of Cthulhu: Dark Corners of the Earth (truly underrated)

Warcraft series (never played WoW)

As Lord Templar TreenVall, Mass Effect and The Elder Scrolls always do it for me, in addition to Assassin's Creed series, Darksiders (great score), Vampire The Masquerade (both of them), The Dig, Jade Empire (yes...), Gauntlet, Castlevania, Dragon Age to name but a few... And I will totally agree with Truthseer about the Dark Corners of the Earth... Amazing score!!

Halo 2 & 3 original soundtrack. orchestral and rock. Enough said.
The OSt of 'Baldur's Gate' and 'Fallout 2' are the ones I like most of all.
Other than them I quite enjoy the Sci-Fi themes of 'Imperium Galactica II - Alliances' and 'Master of Orion II - Battle at Antares' now and then.
If I want a mixture of cyberpunk and fantasy, the OSt of 'Planescape: Torment' and 'Shadowrun Returns' as well as the music from the Amiga game 'HeroQuest' (original, metal and piano version) are my top choices.
Then there's also the beautiful different music of 'Arcanum - Of Steamworks and Magick Obscura' as well as the gloomy world of darkness-themes from 'Vampire The Masquerade - Redemption' and 'Vampire The Masquerade - Bloodlines'.
And to be quite honest: I always turn the music off when I play a game and have the music instead be played from a CD or mp3-file. That way I enjoy the game-OSt' so much more.

The music for Diablo 1 & 2 was composed by Matt Uelmen. He also composed the soundtracks for Torchlight 1 & 2 -- games that are intentionally very parallel in design to Diablo 1 & 2. And Matt Uelmen also baked some of that parallelism into Torchlight's soundtrack. The town hub themes of Diablo 1 and Torchlight 1 feel especially similar.
